White Wine
White wine keeps its' colour by the juice spending no time, or very little time, in contact with the skins during the wine making process. Some countries lightly crush the grapes and then allow them to macerate in a cool tank for 24hrs, to produce a heavier-bodied wine. This is particularly popular in California. Fermentation can be warm or cool, fast or slow. It is thought that the cooler the fermentation, the fruitier, but sometimes less complex, the wine.
